Catalogue Note:
Molds of this type were generally used to create decorative jellies or flummery, a sweet dish made with beaten eggs, milk, sugar, and flavorings. Employing blancmanges in high-relief with a base of translucent gelatin creates a striking cameo effect. See Ivan Day’s blog http://foodhistorjottings.blogspot.com/, Saturday, 8 October 2011, ‘Jellies and Gemstones’, for creative examples employing period Wedgwood creamware molds.
